If you success to complete the levels, your recipes will unlock new sushi. You must order the stocks;rice, sake , ingredients quickly while you are doing new sushi because your customers want more sushi, so it don't let they wait so long time. If you want to keep them to happy, so you should give them a sake!
Don't worry, there are getting a tutorial which can make you learn how to do a sushi with used the different of ingredients..If you cannot remember what you need to make a sushi, you need to check your recipe book then memorize it.
